Origin
The Saint-Emilion AOC is one of France’s most famous wine regions. The Unesco world heritage town of Saint-Emilion attracts an average of one million wine tourists per year. Planted exclusively with red grape varieties, its mainly limestone soils allow its primary grape varieties, the Merlot and Cabernet Franc, to attain optimal maturity.
Vinification
After a pre-fermentation maceration to extract the aromatic compounds from the skins, vinification is conducted at a controlled temperature. Carefully managed and adapted pumping-over operations enable optimal extraction of the polyphenols and anthocyanins. 8-10 months ageing allows the tannins to soften and gives the wine its intense, oaky character.
