Languedoc


Appearance : strong crimson
Nose : spicy notes and jammy red fruit
Palate : powerful on entry, harmonious on the palate with lingering notes of ripe fruit
Serve : between 16-18°C
Best enjoyed : within 2-3 years
Food-wine pairings : red meats in a sauce or stew, ratatouille, sheep’s cheeses
Recommended dish : Leg of lamb prepared with thyme

Origin

The Languedoc AOC is part of the largest wine region in France, the Languedoc Roussillon. The Mediterranean climate, very low rainfall and very strong wind provide this region with ideal conditions for viticulture.

Vinification

After a short pre-fermentation maceration to extract the aromatic compounds from the skins, vinification takes place at a controlled temperature. 3-5 months ageing then enables the tannins to soften and gives the wine its spicy, oaky character.
