The Languedoc AOC is part of the largest wine region in France, the Languedoc Roussillon. The Mediterranean climate, very low rainfall and very strong wind provide this region with ideal conditions for viticulture.
After a short pre-fermentation maceration to extract the aromatic compounds from the skins, vinification takes place at a controlled temperature. 3-5 months ageing then enables the tannins to soften and gives the wine its spicy, oaky character.
